WARM AND WONDERFUL: INDIVIDUAL CHOCOLATE SOUFFLÉS ARE EASY TO MASTER

Soufflés always intimidate, but they are not difficult. These individual chocolate soufflés are fluffy, delightful bites of chocolate heaven. And so easy! They will be a favorite... serve them warm out of the oven with just a drizzle of heavy cream... or ice cream, or whiskey sauce, or whatever you have around.

INDIVIDUAL CHOCOLATE SOUFFLÉS

Prep Time: 20 minutes    Cook Time: 15 minutes

INGREDIENTS

1 tablespoon butter

1 tablespoon cocoa

1/3 cup granulated sugar, plus 2 tablespoons for the ramekins

5 ounces bittersweet chocolate, chopped finely

3 large egg yolks, room temperature

6 large egg whites, room temperature

1/16 teaspoon salt

DIRECTIONS:

Preheat oven to 375 degrees F.

Butter four oven-proof ramekins. Combine the cocoa and 2 tablespoons sugar. Dust the ramekins with the cocoa and sugar mixture. Set aside.

Carefully melt the chocolate in a heat-proof glass bowl over simmering water. Chocolate burns quickly so don't leave it unattended. Stir until just melted then remove the chocolate from the heat. Add the egg yolks, one at a time, gently whisking them together with the chocolate. Set aside.  

In a separate bowl, beat egg whites with salt on medium speed until they are shiny and form soft peaks. Then turn the mixer on high and add the sugar, a little at a time until the egg whites will hold stiff shiny peaks.

Next, begin to incorporate the egg whites into the chocolate. This is an important step. You do not want to deflate the egg whites, but you do need to make sure there are no visible whites peeking through. Use a large spoon, spatula, or whisk; work gently. Add about a cup of the egg whites to the chocolate to smooth out the chocolate a bit. Then add the rest, 1/3 at a time, spooning up and over, very gently, to incorporate. It should be very light and fluffy, but make sure you have no threads of white peeking through the chocolate.

Spoon into the prepared ramekins- leaving about 1/2 inch at the top. Bake for 15 minutes or you can bake up to 18 minutes to make them more cake-like.

You can let these sit for up to 30 minutes before baking or you can bake them immediately. Makes 4.

RECIPE: MY MOM'S SPICY SOUTHERN CHEESE STRAWS

My mom would always make these spicy cheese straws for the holidays and was sure to have them waiting for us for almost every celebration. A Southern staple for teas, weddings and showers, you can make these as wafers, as shown, or use a cookie press to shape them into straws. I find the wafers faster and easier-- plus I can roll the dough into a log and freeze. That way I can just slice and bake when guests pop in or when I am in need of a quick bite to serve with a glass of wine or Champagne.

I want to mention that this dough always looks like it is not "wet" enough once you mix it. Do not be tempted to add additional butter or liquid. It will come together. Just use your hands to form it. You'll see.

SPICY SOUTHERN CHEESE STRAWS * Wafer version

Skill Level: Easy

Prep Time: 15 minutes        Cook Time: 10-12 minutes

 INGREDIENTS 

1 pound extra sharp cheddar cheese, grated

1 stick unsalted butter, cut into cubes*

1/4 teaspoon cayenne pepper

2 cups all-purpose flour

3/4 teaspoon kosher salt

Dash Tabasco or to taste

 DIRECTIONS:

Preheat oven to 350F. Line a baking sheet with parchment paper.

Chill the cheese well and grate it using a food processor or the side with large holes on a box grater. Set aside.

NOTE: I make this recipe in a food processor because I find it easier but you do not have to use a food processor. My mom never had one. Just mix in a bowl.

In a food processor, add the flour, salt and pepper and pulse 10-12 times to blend. Add the butter. Turn the food processor to "run" for 10 seconds. The result should be like coarse cornmeal. If it is not, pulse a few more times. Add the cheese and the hot sauce. Pulse just until the cheese is incorporated. Turn the food processor to "run" for 5-6 seconds. 

*NOTE: If you intend to pipe the dough into straws, you may obtain a better/easier to pipe result if you melt the butter rather than use cold butter and leave the cheese at room temperature. See directions for piping into straws below. Many of the old school southern recipes call for melted butter or margarine. Margarine results in a crisper straw.

(Note: If you do not have a food processor, mix the dry ingredients together. Use a pastry cutter or two forks to cut the butter and the cheese into the flour. Add the hot sauce and mix well.)

For wafers: Turn the dough out onto a sheet of plastic wrap for wafers. Shape it into a log using your hands and roll the dough up in the plastic. Twist the ends of the plastic wrap to secure and put into the refrigerator for at least 30 minutes. To bake, remove the plastic wrap and slice into discs, place about 2 inches apart on the prepared baking sheet and bake for 10-12 minutes or until lightly browned. Cool on a rack.

(Note: Another option is to use a very small ice cream scoop to portion uniform balls onto the prepared pan. Using a fork, (which you may need to flour) press each one, creating the design shown above.)

Easy homemade Southern cheese straws

For straws: Place the dough into a cookie press or pastry bag fitted with a star tip. Push the dough into one corner of the bag and press the air out. Snip the tip and pipe them into 3” long strips about 2 inches apart. Bake for 10-12 minutes or until lightly browned on the bottom and edges.

Yield: 2- 4 dozen depending on the size and shape. You can get 55-60 wafers from this recipe using a small ice cream scoop or melon baller.

RECIPE: PUFF PASTRY STRAWBERRY NAPOLEONS

Easy to make but impressive to serve, these Strawberry Napoleons made from frozen puff pastry you buy in a box at the store will be your new go-to for dessert. I've made these with all sorts of fillings...

Be creative and use your own favorite flavors or whatever fruit that is in season. Find the puff pastry in a box (Pepperidge Farm is good and readily available at most stores) in the same section where you find frozen pie crust and frozen rolls.

Simply cut puff pastry sheets you find m the freezer section of the store into the size or shape you like, bake, slice, and fill with your favorite fruit and flavored whipped cream.

STRAWBERRY NAPOLEONS

INGREDIENTS

2 cups fresh or frozen strawberries

1 tablespoon granulated sugar

2 tablespoons Grand Marnier (optional)

1 cup whipping cream

1 cup Marscapone cheese

1 tablespoon vanilla

3 tablespoons + more Confectioners sugar (you will need some for garnish)

1 orange for a bit of juice and the zest (optional)

1 box of frozen puff pastry, thawed according to package directions

all-purpose flour (for rolling pastry)

 

DIRECTIONS:

Preheat oven to 400 F. Line a baking sheet with parchment paper.  

Clean, core and slice strawberries. Put in a bowl with the sugar and Grand Marnier. Set aside.

In a mixing bowl, combine the whipping cream, vanilla and 2-3 tablespoons of the Confectioners sugar plus 2 tablespoons orange juice (or use Grand Marnier) and 1 teaspoon orange zest. Beat on high speed until stiff peaks form. Fold in the Marscapone cheese. Spoon into a piping bag. Refrigerate.

Dust the work surface with a little flour so it won't stick. Open one package of the puff pastry. Cut along the fold lines to make 3 pieces and cut each of those into 4 pieces. Repeat with the second package. Put on the baking sheet and bake for approximately 15 minutes or until golden brown. Let cool on a wire rack.

Split each of the puff pastry squares in half. Put the bottom halves on a serving plate. Pipe with whipping cream mixture.

Drain the strawberries. Add a layer on top of the whipped cream. Pipe some additional whipping cream and put on the top. Dust with powdered sugar.

There are a million variations on this recipe. Add a drizzle of melted chocolate for an extra special finish.

Cook fresh fruits like peaches, apples, pears, or plums until they are slightly softened. Add some sugar and heat until dissolved. Add brandy or other liqueur (off the heat so it won't flame) to create a sauce. Allow to cool before spooning onto the puff pastry. Or use frozen fruit with a little sugar and the brandy to accomplish the same thing.
